Ingredients for 8 falafel:
300g beetroot golden or red
2 tbls chickpea flour
1 x 400g organic chickpeas – drained and rinsed
1 solo garlic clove
1 tsp ground cumin
1 tbls of sesame seeds
Pinch of sea salt flakes
Dash of black pepper
What to do….
Preheat the oven to 200degrees (FAN OVEN)
Wash, peel & chop the beetroots to bite sized pieces
Place on a baking tray and drizzle with the olive oil, salt & pepper
Cook until soft – approx. 40mins
Once cooked, leave to cool and then place the beetroots in your food processor together with the chick peas, flour, garlic, cumin and salt.
Pulse to a creamy smooth paste – may take a while!
Use an ice-cream scoop to create 8 balls of the mixture and place on the baking tray.
Sprinkle with the sesame seeds.
Bake in the oven for approx 30mins – until “golden” and smelling delicious.
